After various conversations with some of you guys I thought it would be helpful to provide a list of resources that will help you along your bubble journey. These are resources that helped me, hopefully they can help you too! I'll update this periodically as I think of more things that have helped me along my bubble journey.

This is set up in sequential order from what I deem as the fundamentals to more and more complexity.
If your working to learn and build as quickly as possible in Bubble. It may not be best practice to explore the two Codecademy courses below. But in the long run, having a good understanding of basic HTML/CSS/JS will provide a tremendous advantage.

These interactive lessons by bubble helped me to grasp the basic thinking behind building with bubble. I completed all of the lessons, and some more than once. They are very helpful I would recommend everyone start here before diving into tutorials or video courses.

Bubble interactive lessons. Learn how to use Bbble click-by-click. Bubble is a visual programing language. Instead of typing code, use a visual editor to build applications.
I found this tutorial helpful as far as putting the concepts in the interactive lesson to use.
Taking time to read the manual helped me to better understand the full scope of what bubble is good at accomplishing. I would recommended skimming through it, and having it handy for any issues you may run into.

Copilot has a good selection of courses and has coaching available. I purchased the Platform Payments 2, Notifications, Messaging, User Analytics, Mastering Api's, and Plugin Development courses from them.
(Yes, quite a collection they are my go to for bubble courses.)
I have only watched to a few of their courses. But they have a wide variety of courses that are shorter in length. That focus around issues like security ,video chat integration, and database design.
Stripe Js Basics
This can help to understand the basics of implementing stripe and payment processors. Will give you an understanding of how tokenization, and how to work with the stripe JS plugin.
The Bubble forum is the Visual Development of stack overflow. Most questions can be found with a quick google search of something like "glide bubble io." The forum has been by far the most helpful at times when I'm stuck, or need to look at a problem from a different view point.

Mobile & Native
I've seen questions about building mobile and natives apps in bubble. Here are some resources if you are interested in building an mobile app in bubble. Quick note, I wouldn't simply push my responsive website as a native app. Bubble allows you to build mobile first pages, I would create mobiles pages of web app within bubble. Rather than porting my responsive website, this way you have more control and focus on building a uniquely native experience when the time comes.
Jasonelle AKA Jasonette is free and open source. You can use the BDK native plugins, to create a more native experience in your app.

This book was very helpful in understanding the philosophy behind building scalable apps on bubble.
@gf_wolfer Don't worry, there's lots of colorful pictures @alexreed92 It's difficult to answer that question, since one of the main points of the book is that performance can mean very different things, depending on what your app does (as an example, page load can be important for one app, while rapid data processing can be the main feature of another).
